RATATOUILLE, una receta francesa para chuparse los dedos

Ratatouille is a french dish made with eggplant, zucchini, pepper, tomato and sometimes, other vegetables that are baked or cooked It's very similar to the spanish pisto recipe The basis of this simple dish is onion, pepper, tomato and celery When everything is in the pot, we throw leaves of basil, thyme and bay leaf Now, in a frying pan, we pour a lot of oil and when it is hot, fry zucchini When the zucchini is brown, remove it from the pan and quit the excess oil We do the same with eggplant After quiting the excess oil, we pour the eggplant and the zucchini together with the rest of the vegetables in the pot Add salt and pepper

Serve it hot Enjoy! 2 eggplants, 4 zucchini, 2 onions, 1 red pepper, 1 green pepper, 20 cherry tomatoes, 1/2 celery, basil, thyme, 2 bay leaves, olive oil, salt and pepper
