in this video I show you a delicious gyros recipetoday we gonna cook gyros with a creamy metaxa saucefor that I got 1 kilogram pork neck herecut the meat into about 1 centimeter thick slices firstand then into strips
you should cut the stripes a bit thickerthen the meat does not cook too fast & stays nicely juicy after being bakednext peel an onion & cut into thin stripsand afterwards we can marinate the meatfor that give 3 teaspoons oregano, 2 teaspoons thyme
each a teaspoon rosemary, paprika powder, garlic powder & ground coriander½ teaspoon cumin, ¼ teaspoon chili flakes & the onion strips to the meatalso season well with salt & pepperand finally pour in 50 – 75 milliliters oilive oilnow mix everything well
until all the spices have distributed evenly
that's what the meat should look likenow get a sheet cling filmcover the meat& allow to marinate for at least 4 hours in the fridgeafter the marinating time heat up a large pan without adding oil or fat
give the meat in portions into the pan& sear for about 3 – 4 minutes from all sidesturn once & then lift the meat strips out of the pan & set asideput the meat pan back to the stove over medium heatadd 2 tablespoons ajvar 6 2 tablespoons tomato paste
allow to roast for about 1 minute while stirring constantlyif that's done deglaze everything with 75 milliliters metaxastir in well & allow the metaxa to boil down almost completelyfinally we only have to add 200 milliliters cream & 400 grams creme fraichemix well
bring to a boil & then remove from heatnext, place the gyros in a suitable baking dishpour over the hot metaxa saucespread everything with 150 grams grated cheese& now place the baking dish into the preheated oven
for about 20 – 25 minutes at 200°C (top/bottom heat)if the cheese is beautifully meltedget the done gyros out of the ovenand dish up immediatelyfor that serve the gyros on plates
