Calling all cheese lovers! Today we're making tiropita aka Greek cheese pie It's easy, super fast and incredibly delicious
You can't believe how good it is until you try it In a large bowl crack 3 eggs
Always use organic, free-range eggs, the larger, the better We'll need Greek graviera cheese I got my cheese from Thesgala vending machines There are many locations throughout Greece Find the closest location to you at their website
It's really easy to open the package, plus each package has the exact amount of cheese our recipe asks for It's time for feta cheese This particular cheese has great taste to it, because it's made with farm-fresh milk from farmers in Northern Greece Remove feta from its brine Add fresh pepper
No need to add salt as our cheese is salty enough Add freshly grated nutmeg Mix well using a fork Incorporate cheese with eggs until mixture is rich and thick The authentic Greek tiropita calls for good quality ingredients
Always go for Greek products If you want a cheese-y tiropita crumble feta in larger chunks This is how your mixture should look like Now add milk to the mixture Good quality, farm-fresh milk from local producers Mix well
Don't worry if mixture looks kind of watery It will thicken during the baking process Mixture is ready Put it aside and prepare your phyllo Grease baking pan with olive oil
I use rustic phyllo, 6 phyllo sheets to be exact Line the greased pan with the first phyllo sheet Make sure it covers the edges Brush with a dash of olive oil I prefer extra virgin olive oil Brush with olive oil all over the phyllo
Next phyllo sheet Repeat the process We now have three more phyllo sheets Pour cheese mixture in the pan The packages I used included the exact amount of cheese I need to make a pan of authentic Greek tiropita
Roll in the overhanging edges This process needs patience You can find the recipe at MyGreekSaladcom (link in description below) Brush the phyllo with olive oil and layer the next phyllo sheets Again, brush with olive oil
Sprinkle with a bit of water Sprinkle with black sesame seeds Scar the top of tiropita with a sharp knife Bake in preheated oven This smell is insanely good! It's heavenly
Can you hear the phyllo cracking? Great crust with fluffy cheese filling What more could you ask for? You want the corner slice, right? I thought so In Greece we say that this slice means that "your mother-in-law loves you" Now you know the authentic recipe for tiropita See you later
Yassou!
