Cajun Chicken

2 boneless chicken breasts, cut into strips
1 teaspoon Cajun seasoning
1 large red or green pepper, cut into strips (6 ounces)
1/4 cup slivered onion (1 1/4 ounces)
1 clove garlic, minced
Oil and butter
Salt and pepper, to taste
1. Put the raw chicken in a small bowl and toss with the Cajun seasoning to coat.
2. Heat the oil and butter in a large skillet on medium-high. Sauté' the chicken, peppers, onion and garlic until the chicken is cooked through and the peppers are crisp-tender.
3. Season with salt and pepper.
