Cajun Chicken |

3 boneless chicken breasts, sliced in thin strips
1 teaspoon Cajun seasoning
3 tablespoons butter
1 large green bell pepper, cut in thin strips (6 ounces)
1 large red bell pepper, cut in thin strips
(6 ounces)
6 large mushrooms, sliced (about 5 ounces)
4 green onions, cut diagonally in 1/2-inch pieces
1/8 teaspoon basil
1/8 teaspoon garlic powder
1/8 teaspoon pepper
1/4 teaspoon salt, or to taste
1/4 cup heavy cream
1. In a medium bowl, toss the chicken pieces with the Cajun seasoning.
2. Heat the butter in a large skillet or electric wok on medium-high heat. Stir-fry the chicken until it's almost done.
3. Add the peppers, mushrooms and green onions. Stir-fry until the peppers are crisp-tender. Reduce heat to low and stir in seasonings then the cream.
