in today's episode I show you a delicious recipe for Greek Souvlaki Skewers& a homemade Tzatziki Saucefirst cut the meat into 2 – 3 centimeter large piecesI got pork loin steaks herebut you can also use neck steaks or pork tenderloin here
basically everything that is suitable for short roastingnext, peel 2 – 3 shallots & cut into thin ringsalso peel garlic & chop finelyafter that give meat along with garlic & shallots into a bowl or baking dish
add som fresh thyme & fresh rosemarysimply pluck off against the growth directionalso add 50 milliliters olive oil50 milliliter white wine vinegar& a good pinch of salt & pepper
mix wellthen cover with cling filmand allow to marinate for about 1 hour in the fridgebetter over nightfor the tzatziki line the working top with a kitchen towel
then coarsely grate ½ cucumber with a graterthen fold up the towel& squeeze out the cucumber over the sinkgive the squeezed out cucumber along with 150 grams Greek yoghurt150 grams regular quark
a tablespoon finely chopped dill1 – 2 pressed clove(s) of garlic a good dash white wine vinegar 6 olive oil each
& a good pinch of salt & pepperstir together until well combined, then set aside until servingbefore searing we have to prepare the skewersfor that simply put the marinated meat in a row on the skewers 4 – 5 pieces each skewerdepending on their size
then heat up a gill pan without adding oil or fat& once the pan is hot enough add the souvlaki skewers to the panand sear about 2 – 3 minutes each side over medium heatturn onceand brown until done
then serveput some french fries on a platearrange 2 souvlaki skewers onto the fries& serve along with 1 – 2 tablespoons of tzatziki sauceand some onion rings
