Crispy Baked Sweet Potato Tots with Greek Yogurt Dip (Healthy Side Dish!)

We're kicking up our tater tot game a bit today and we're gonna be making some sweet potato tots with the Greek yogurt dip that is super-good I partnered with Jackson's Honest to bring you this recipe and I think you're gonna love it So let's get started So first, we're gonna cook our sweet potatoes So poke a few holes in each of them using a fork

You can either bake the sweet potatoes in the oven at 400 degrees Fahrenheit for about an hour or microwave them for about 8 to 10 minutes Once cooked through, let the sweet potatoes completely cool so you can touch them To make our crispy coating, we're gonna be using Jackson's Honest Sweet Potato Chips There's seriously only three ingredients in these delicious chips: sweet potatoes, organic coconut oil, and sea salt Super-simple

Add the Jackson's Honest Sweet Potato Chips into a food processor followed by a little coconut sugar, sea salt, and ground cinnamon Now, close the processor until the sweet potato chips are evenly broken down into small pieces but not yet to a full powder Now, add the peeled cooked sweet potatoes to a large mixing bowl followed by a little bit of ground cinnamon, and mash them together, but do not puree Place the mash sweet potato mixture into the fridge and allow it to chill This will make it easier to form into tots

To form the sweet potato tots, grab about a tablespoon of the chilled sweet potato mixture and form it into a tot shape using your fingers Think a cylinder with a flat top and bottom If the mixture starts to stick too much to your hands, you can just get your hands wet with a little bit of water Trust me, it really works One at a time, add each of the tots to the crushed sweet potato chip mixture and gently toss to coat it

Then, transfer the coated tot to a rimmed baking sheet lined with parchment paper and then repeat with the remaining mixture Place the tots into the oven and bake for 15 to 20 minutes, gently flipping them halfway through And make sure to watch the tots, especially at the end, to make sure that they don't burn So while the tots are baking, let's go ahead and make a sweet Greek yogurt dipping sauce To do this, add plain Greek yogurt to a small mixing bowl followed by pure maple syrup, pure vanilla extract, and cinnamon
