Budget Freezer Meals for the Slow Cooker & Oven! Healthy Dinner Recipes – Mind Over Munch

I have done freezer meals before and have had LOADS of requests for more since then, and why not? They’re convenient and easy, and when healthy is convenient and easy, it’s much more fun First up is my Freezer Spinach Lasagna Roll-Ups Here are the ingredients you will need First, I mix together ricotta, mozzarella, parmesan, spinach, parsley, basil, garlic, and salt and pep Set aside

I cooked my lasagna noodles al dente, according to package directions, and put them on a cookie sheet I can now divide my ricotta mixture onto each noodle, as well as a bit of sauce Roll it up to create your roll-up! To assemble the dish, spread tomato sauce on the bottom of a 9 by 13 inch baking dish, enough to cover Add in your roll-ups, and top with additional sauce Top it off with grated mozzarella and parmesan! Now the meal is ready to bake, OR freeze! Bake for 30 minutes when fresh, or add 45 minutes to the cook time if it’s frozen and cover with foil

Easy to make and DELICIOUS to taste! I love keeping this in my freezer! Next up is my Corn Chowder, which is actually completely vegan Here are the ingredients you will need Sauté up some garlic and onion in a bit of olive oil, and season with salt and pep Add potatoes, carrots, celery, and bell pepper Cook until the potatoes have softened, around 5 minutes

Add coconut milk, broth, frozen corn, paprika, and thyme Bring to a boil, cover, and simmer for about 15 minutes, until the potatoes are tender Use your handy-dandy immersion blender (or whatever blender you prefer) and blend until smooth, adjusting seasonings to taste You can enjoy it as is, OR allow to cool before storing in freezer-safe containers When you’re ready to enjoy, thaw them out in the fridge the day before and reheat over medium-low heat on the stove

This is one HEARTY soup! It’s so satisfying and packed with nutritious ingredients! Here are the ingredients you will need This is the EASIEST one yet, because all you do is simply add all of the ingredients into a freezer-safe bag, close it up without any air, and freeze it! Thaw it out the day before you want to cook it, and then simply dump the entire thing into the slow cooker and cook on low for 4 to 6 hours Or, if you’re in a time pinch, you could cook on high for 2 to 3 hours Serve as a bowl with rice, or even with tortillas or on a salad! The slow cooker is a great way to add TONS of flavor without the work, and this meal is proof! Thumbs up for EASE of freezer meals!
